SPANISH CHICKEN
INGREDIENTS
6-8 Chicken drumsticks or 8 chicken thighs cut in half
1tbsp Portuguese spice mix
1 can crushed tomatoes
1 clove of garlic
½ capsicum cut into strips
5 mushrooms sliced
1 onion cut into wedges
Some green or black olives
HOW TO
Place chicken in a lined baking dish and sprinkle with seasoning , add the onion ,mushrooms, capsicum, olives & garlic (whole and smashed with a knife) and pour over the tinned tomatoes.
Bake in a preheated oven at 180 degrees for 45 mins or until chicken is cooked through.
Serve with rice or potatoes.
