CURRY RICE SALAD
INGREDIENTS
DRESSING-
2 very heaped tablespoons whole egg mayo
A good lug of olive oil
2 tablespoons of apple cider or red wine vinegar
2-3 tsp of curry powder ( I like lots but make it to your taste, taste dressing as you make it)
Salt and pepper to taste
SALAD-
3 cups of rice to cook in rice cooker
2 celery stalks diced
1 granny smith apple peeled and diced
3 spring onions thinly sliced
¼ cup sultanas
A good handful of parsley diced
HOW TO
Cook rice as you normally would and allow to cool on a tray.
Combine all the ingredients of the dressing and taste, adjust as needed to your taste.
Add all the ingredients apart from rice to the dressing and mix well.
Then add the dressing with ingredients and mix into the rice until all combined.
